Cream of Crab Soup
The Cream of Crab soup is the only crab soup available on the menu, although a Maryland style may appear from time to time on the specials board. Only bowl size served.
Soup consists of cream and lump crab, sprinkled woth Old Bay and served with a small vase of sherry. The crab is nice and sweet, with plenty of chunks to provide crab in every bite. The smell is very good and really makes you excited for that first bite. The broth is a bit thin and has a mild flavor -- crackers add some substance. but it doesn't seem that the kitchen added any sherry to the bowl (hence the vase). The sherry adds a nice kick and flavor complexity, but don't overdo it! Add a little in at a time and stir it up, otherwise you could overpower the delicate balance of the cream.
Overall, a really enoyable soup. The ratio of crab to broth is well balanced, and while the cream is mellow, it does have some flavor to it (perhaps a cream of mushroom base?). Crab quality is also good, and adding your own sherry ensures you get the flavor that you want. Go ahead and try it -- you won't be disappointed!
