Jalapeño Corn Crab Chowder
The chowder consists of jumbo lump crab meat, blended with corn, onions, bacon, and spices in a jalapeño cream base.
One of the first things you notice as you dig in is that there are LOTS of huge lumps of crab. The corn is fresh and very tasty. The broth is spicy, and the consistency is good -- not too thick, not too thin.
The crab meat has a very sweet flavor to it -- very nice when it comes to soups! The jalapeño cream base is very spicy thanks to those little green peppers, but they in no way mask or fight with the crab flavor. As mentioned before, the corn is very fresh tasting, and accentuates the spicy broth well with its sweetness. The bacon is more of an accent than anything else, and you'd probably not miss it if it wasn't there. Bigger chunks of bacon would add some meatiness to the consistency (in addition to the crab). The spice lingers a little after you finish the soup, but it is so good, that it will definitely put a smile on your face!
